Apple Oat Bran Muffins with Sunflower Seeds

Apple and oat muffins

 

 

 

 


Ingredients:

  • 1 cup whole wheat flour
  • 1 cup bran
  • 1/2 cup wheat germ
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 2 Tbsp. oil
  • 1/2 cup honey
  • 1 egg
  • 1 cup apple juice
  • 1 apple, peeled and grated
  • 1 small handful of raisins or sunflower seeds (optional)

Directions:

  1. Preheat oven to 400 degrees.
  2. Add the whole wheat flour, bran, wheat germ, baking soda and cinnamon to a large bowl.
  3. In a separate bowl, combine the egg, oil, honey, apple juice and apple.
  4. Add the wet ingredients to the dry ingredients and mix well, until just combined.
  5. Add raisins and sunflower seeds if desired.
  6. Spoon mixture into muffin cups and bake for 20 minutes, or until golden brown.
