Apple Oat Bran Muffins with Sunflower Seeds

Ingredients:
- 1 cup whole wheat flour
- 1 cup bran
- 1/2 cup wheat germ
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 2 Tbsp. oil
- 1/2 cup honey
- 1 egg
- 1 cup apple juice
- 1 apple, peeled and grated
- 1 small handful of raisins or sunflower seeds (optional)
Directions:
- Preheat oven to 400 degrees.
- Add the whole wheat flour, bran, wheat germ, baking soda and cinnamon to a large bowl.
- In a separate bowl, combine the egg, oil, honey, apple juice and apple.
- Add the wet ingredients to the dry ingredients and mix well, until just combined.
- Add raisins and sunflower seeds if desired.
- Spoon mixture into muffin cups and bake for 20 minutes, or until golden brown.
