Moist and Delicious Low-Calorie Blueberry Bran Breakfast Muffins

 

 

 

 

Ingredients:

  • 1 cup bran
  • 3/4 cup white wheat flour
  • 3/4 tsp. salt
  • 1/4 cup brown sugar
  • 1/2 tsp. baking soda
  • 1/2 cup buttermilk
  • 2 egg whites
  • 1/4 cup applesauce
  • 1/2 cup frozen blueberries

Directions:

  1. Preheat oven to 425.
  2. Mix dry ingredients. Stir in liquid ingredients just until moistened.
  3. Spoon in to sprayed muffin pan.
  4. Bake at 425 for 15-20 minutes.
