Zesty Grilled Salmon with Lemon and Capers on Mixed Greens

 

 

 

 

 

Ingredients:

  • 8 oz. of grilled salmon
  • Juice of 1 lemon
  • Rind/zest of 1 lemon
  • 2 Tbsp. capers
  • Dash of black pepper
  • 1 Tbsp. canola oil                                             
  • Dash of salt 
  • Mixed greens

Directions:

  1. Grill 8 oz. of salmon.
  2. Mix the rest of the ingredients.
  3. Pour over salmon. 
  4. Serve over bed of mixed greens.
