Sweet Potato Casserole with Brown Sugar and Pecans








 

Ingredients for casserole:

  • 4 cups mashed sweet potatoes
  • 1/4 cup brown sugar
  • 1/4 tsp. salt
  • 1/2 cup Egg Beaters®
  • 1 Tbsp. I Can't Believe It's Not Butter Light
  • 1 tsp. vanilla
  • 2 Tbsp. skim milk

Ingredients for topping:

  • 1/4 cup brown sugar
  • 2 Tbsp. flour
  • 1/4 cup chopped pecans
  • 1 Tbsp. I Can't Believe It's Not Butter Light

Directions

  1. Combine topping ingredients in a small bowl.
  2. Stir to combine.
  3. Set aside.
  4. Spray a medium casserole dish with non-stick spray.
  5. Place the casserole ingredients into a large bowl and using a hand mixer beat the ingredients together until mixed.
  6. Pour into prepared dish.
  7. Distribute topping evenly over casserole and bake for approximately 45 minutes.

Yield: 10 servings (serving size 1/2 cup)
