Hearty, Low Fat and Lycopene Loaded Tomato Basil Soup Recipe

Ingredients:
- 1 28-ounce can crushed tomatoes
- 1/2 cup Light & Tangy V8 Juice (to desired thickness)
- 1 cup low sodium chicken or vegetable stock
- 1/2 cup fresh basil, chopped
- 1 (12 oz.) can evaporated skim milk
- 2 Tbsp. light margarine (I Can't Believe It's Not Butter Light)
- 2 Tbsp. light sour cream
- 2 Tbsp. grated Parmesan cheese
- Salt and pepper to taste
Directions:
- Combine tomatoes, tomato juice and stock in a sauce pan. Simmer on medium heat for 20 minutes.
- Stir in evaporated milk, margarine, sour cream, cheese and basil. Add salt and pepper to taste. Garnish with grated Parmesan cheese and basil leaves.
Yield: Serves 6 (serving size approximately one cup)
