Hearty, Low Fat and Lycopene Loaded Tomato Basil Soup Recipe

 

Ingredients:

  • 1 28-ounce can crushed tomatoes
  • 1/2 cup Light & Tangy V8 Juice (to desired thickness)
  • 1 cup low sodium chicken or vegetable stock
  • 1/2 cup fresh basil, chopped
  • 1 (12 oz.) can evaporated skim milk
  • 2 Tbsp. light margarine (I Can't Believe It's Not Butter Light)
  • 2 Tbsp. light sour cream
  • 2 Tbsp. grated Parmesan cheese
  • Salt and pepper to taste

Directions:

  1. Combine tomatoes, tomato juice and stock in a sauce pan.  Simmer on medium heat for 20 minutes.
  2. Stir in evaporated milk, margarine, sour cream, cheese and basil. Add salt and pepper to taste.  Garnish with grated Parmesan cheese and basil leaves.

Yield: Serves 6 (serving size approximately one cup)
