Our Holly-Berry Wholewheat Cookies Recipe Is a Healthy Treat

Ingredients

1 cup white wholewheat pastry flour

½ cup oats

2 Tbsp. oat bran

2 tsp. baking powder
-
½ tsp. salt
-
½ cup unsalted butter (substitute ½ cup apple sauce)

¾ cup sugar or sugar substitute
-
2 egg whites
-
1/3 cup vanilla Greek yogurt
-
1 Tbsp. lemon zest
-
2 tsp. vanilla extract
-
1 cup fresh or thawed blueberries
Directions

Preheat the oven to 375°F.

In a large bowl, mix flour, oats, oat bran, baking powder and salt.

In a separate bowl, cream together butter, sugar, egg whites, yogurt, vanilla extract and lemon zest.

Stir the dry ingredients into the wet ingredients.

Fold in the blueberries.

Chill the dough in the refrigerator for 10 to 20 minutes.

Spoon onto a lightly-sprayed cookie sheet.

Bake for 14-15 minutes.
